Risotto With Shrimp, Gorgonzola and Orange

Risotto with Prawns

Ingredienti per 2 persone:200 gr di riso;

  • 300 gr di gamberi;
  • 120 gr di gorgonzola;
  • 1 cipolla media bianca;
  • brodo di pesce q.b;
  • 1 ciuffo di prezzemolo;
  • succo di arancio non trattato q.b
  • 4 cucchiai di olio;
  • sale rosa dell’himalaya,
  • pepe rosa

Preparazione:
Per prima cosa pulire i gamberi, togliendo le teste le code e le carcasse e metterle in un pentolino con un po’ di acqua aggiungendo la cipolla tagliata a pezzi, un po’ sale e mettetelo sul fuoco facendolo cuocere per circa 15 minuti, poi filtratelo e metterlo da parte. Intanto incidete i dorsi dei gamberi togliendo il filino nero, e metteteli da parte tenendolo sempre caldo.Tagliate la cipolla fina e metterla ad appassire con olio in un tegame da risotto. Aggiungere il riso e fatelo tostare leggermente mescolando con un cucchiaio di legno.Bagnate con il brodo bollente continuando la cottura e mescolando di tanto in tanto aggiungendo il brodo che occorre, tre minuti prima della cottura completa, separatamente in una padella capiente mettete un po’ di burro aggiungere i gamberi sgusciati e lavati, aggiustare di sale e pepe ed il succo di mezza arancia facendoli cuocere il giusto tempo senza farli indurire. Versate il riso nella padella con i gamberi e cominciate a mantecare fino a fine cottura del riso, spegnete il fuoco, aggiungete il gorgonzola a pezzetti il prezzemolo tritato, quindi girate ancora il tutto giusto a quando il gorgonzola sia fuso.

Risotto with shrimp gorgonzola and orange

Serves 2 people

  • 200 gr of arborio rice
  • 300 gr of shrimp
  • 120 gr of gorgonzola
  • 1 medium white onion;
  • fish broth q.b
  • 1 sprig of parsley;
  • orange juice untreated q.b
  • olive oil q.b
  • Himalayan salt,
  • pink pepperPreparation:

First clean the prawns, removing the heads and tails. Put the meat aside. Put the heads and tails in a saucepan with a little water, add the onion cut into pieces, a little salt, and put the pan on the fire, cooking for about 15 minutes. Then, strain the stock and set it aside. Meanwhile, clean the backs of the prawns by removing the black line of waste.
Toast the rice, lightly stirring with a wooden spoon. Slowly add the hot broth to the rice and continue cooking, stirring occasionally, adding the stock as needed.
Three minutes before it is finished, separately, put a little butter in a large pan, add the peeled and washed shrimp, season with salt and pepper and the juice of half an orange. Saute the shrimp being careful not to overcook them. Pour the rice into the pan with the shrimp and saute until the rice is cooked. Turn off the heat, add the gorgonzola, chopped parsley, then stir until the gorgonzola has melted.
